How do I help the few ESOL students in my classes without having to give up hours of my time that I don't have? Are there web sites out there my students can work on without my help which are useful to them?

For the moment, I'll confine myself to resources on the Department for Education and Skills website which might be of use to your subject-teaching colleagues. There is a Key Stage 3 National Strategy document for each core and foundation subject to be taught to pupils with English as an Additional Language. The documents are available online:
